Friday Night Dinner: 6:00-7:30pm Buffet Style, Vegetarians Served First
[Leftovers saved for late arrivals until 10 PM]

  • Posole, simmered pork stew with hominy & mushrooms (mini varieties, trumpets, & porcini)
  • Vegetarian version with Tofu or Tempeh & mushrooms (mini varieties, trumpets, porcini)
  • Warm corn tortillas, cabbage, radishes and onions for garnish
  • Salad of fresh greens and cabbage slaw, with mushrooms & oyster mushroom dressing
  • Raspberry crumble bars

Saturday Night Dinner: 6:00-7:30pm Buffet Style, Vegetarians Served First

  • Roast Chicken with maple mustard mushroom sauce (maitake and oyster mushrooms)
  • Vegetarian Stuffed Bell Peppers with marinated tempeh & mushrooms (maitake and oysters)
  • Herbed cheesy black trumpet polenta
  • Roasted brussels sprouts or broccoli [Veg may vary depending on availability]
  • Mixed green salad and fresh homemade bread
  • Apple crisp w/ candy cap whipped cream

Breakfast: 7:30-9:00am Buffet Style, Staff & Vegetarians Served First

  • Day 1:
    • Heather’s French Toast with candy caps, berries & walnuts, maple syrup, & sausages
    • Our special miso and vegetable broth
    • Fresh fruit, Granola, Oatmeal, & Yogurt
    • Orange Juice, Coffee, Hot Chocolate & Teas
  • Day 2:
    • Heather’s Mushroom & Vegetable Frittata (mini varieties), breakfast ham, home fries, toast
    • Warm boiled eggs & our special miso and vegetable broth
    • Fresh Fruit, Granola, Oatmeal, & Yogurt
    • Orange Juice, Coffee, Hot Chocolate & Teas
Lunch: Bagged by Campers after Breakfast, from 9:00-10:00am
  • Day 1:
  • Sandwich bar: Quality cold cuts, Tuna Salad, Cheeses, Tomato, Sprouts, Lettuce, Pickles, Condiments, Hummus, Peanut Butter, Trail Mix, Fruit, Cookies, & Juice Drinks
  • Day 2:
  • Bagels & Smoked Salmon, Tomatoes, Sprouts, Onions, Cream Cheese, capers, Cookies & Fruit
